Mayonnaise

Ingredients

1
eggs (1 large egg, or 1 small egg and 1 egg yolk)
1 T
white wine vinegar
1 T
wholegrain mustard (Dijon works well)
1 pn
Salt
1 c
Oil (Use a light oil like sunflower or canola)
1 ds
Lemon juice

Instructions

  1. Add egg to jar. Blitz for 20 seconds with stick blender.
  2. Add vinegar, mustard, salt. Blitz for further 20 seconds.
  3. Continue to blitz while drizzling in oil a drop at a time.
  4. Add dash of lemon juice and mix.

Notes

Nearly every mayo recipe calls for eggs at "room temperature"; so I warm the eggs in a cup of tepid water first. (+/– 25˚C). Also, make sure your stick blender fits in the mouth of the jar.
