My variation on the Packo classic

Ingredients
1 t Chilli powder
1 t fenugreek powder (methi)
1 t Coriander powder (dhania)
1 t mustard powder
1 t fennel powder (soomph)
1 t Turmeric powder
1 t Cumin powder (jeera)
1 t Mango powder (amchur)
1 t Salt
1 pn black pepper
1 c Vegetable oil
1 c Vinegar
Instructions
- Remove stems from chillies
- Soak chillies for 48 hours in vinegar. Discard vinegar, dry chillies in salad spinner to remove excess.
- Stuff chillies into sterilised jar.
- Briefly dry roast spices, add oil and heat through.
- Pour hot oil and spice mixture over chillies in jar.

I used the ingredient list on the bottle as a starting point and added the mango powder and black pepper.
