My variation on the Packo classic

Ingredients
1 t Chilli powder
1 t fenugreek powder (methi)
1 t Coriander powder (dhania)
1 t mustard powder
1 t fennel powder (soomph)
1 t Turmeric powder
1 t Cumin powder (jeera)
1 t Mango powder (amchur)
1 t Salt
1 pn black pepper
1 c Vegetable oil
1 c Vinegar
Instructions
  1. Remove stems from chillies
  2. Soak chillies for 48 hours in vinegar. Discard vinegar, dry chillies in salad spinner to remove excess.
  3. Stuff chillies into sterilised jar.
  4. Briefly dry roast spices, add oil and heat through.
  5. Pour hot oil and spice mixture over chillies in jar.

I used the ingredient list on the bottle as a starting point and added the mango powder and black pepper.
