Description
Lemon Meringue Pie
Ingredients
250 g
coconut biscuits (Grated – Tennis biscuits work fab) 125 g
butter (melted) 1 cn
condensed milk 3
eggs (separated) 1⁄2 c
Lemon juice 2 t
Lemon rind 1⁄2 c
Sugar (white)Instructions
Preheat oven to 180°C.
Combine butter and biscuit crumbs in, press into base and sides of a 23cm flan pan. Refrigerate until firm.
Beat together Condensed Milk, egg-yolks, lemon juice and lemon rind, pour over biscuit base.
Beat egg-whites until soft peaks form, gradually beat in sugar until mixture is stiff and sugar dissolved.
Spoon meringue over filling. Bake 15-20 minutes until meringue is light golden. Serve warm or cold.
