Description

Anchovies are the key ingredient in a classic Caesar Salad dressing; I substitute Thai Fish Sauce which is made from anchovy.

Ingredients

egg yolks
1 clv
Garlic (crushed)
2 T
thai fish sauce
2 T
red wine vinegar
1 T
dijon mustard
1 t
worcestershire sauce ("Real" Worcestershire sauce contains anchovies )
1 pn
Salt
1 pn
black pepper
1 ds
tabasco
150 ml
Olive oil (This is a little more than a half cup)
3 T
parmesan (Finely grated)
2 T
Lemon juice

Instructions

  • Combine ingredients except cheese and lemon juicein a wide mouth jar.
  • Blitz with a stick blender moving it up and down in the jar to emulsify evenly
  • Stir in lemon juice
  • Stir in grated Parmesan

This is enough for two large salads. Use half, put a lid on the jar and refrigerate.
