Anchovies are the key ingredient in a classic Caesar Salad dressing; I substitute Thai Fish Sauce which is made from anchovy.
1 clvGarlic (crushed)
2 Tthai fish sauce
2 Tred wine vinegar
1 Tdijon mustard
1 tworcestershire sauce ("Real" Worcestershire sauce contains anchovies )
1 pnblack pepper
150 mlOlive oil (This is a little more than a half cup)
3 Tparmesan (Finely grated)
2 TLemon juice
- Combine ingredients except cheese and lemon juicein a wide mouth jar.
- Blitz with a stick blender moving it up and down in the jar to emulsify evenly
- Stir in lemon juice
- Stir in grated Parmesan
This is enough for two large salads. Use half, put a lid on the jar and refrigerate.
