Ingredients
For Pudding
1 c Sugar
2 eggs
2 T Apricot Jam
1 1⁄4 c Cake Flour
1 t Bicarbonate of Soda
2 T butter
1 T Vinegar
1 c Milk
For Sauce
1 c Milk
125 g butter
1⁄2 c Sugar
1⁄2 c Brandy
Instructions
- Preheat oven to 180˚C
- Beat eggs and sugar until sugar dissolves. Add jam and beat again.
- Sift flour, bicarb, salt into mixing bowl.
- Melt butter on low heat, then add vinegar and stir, then add milk.
- Add egg/sugar/jam mixture to flour and mix well.
- Add butter/vinegar/milk and mix well.
- Pour mixture into baking dish and bake for 45 min.
- Meanwhile, mix sauce ingredients except brandy and simmer on low heat.
- Remove pudding from oven, mix brandy into sauce, pour over pudding.
- Poke holes in pudding with knife point to allow sauce to soak in.
