Ingredients
  For Pudding
1 c Sugar
2 eggs
2 T Apricot Jam
1 1⁄4 c Cake Flour
1 t Bicarbonate of Soda
2 T butter
1 T Vinegar
1 c Milk
  For Sauce
1 c Milk
125 g butter
1⁄2 c Sugar
1⁄2 c Brandy
Instructions
  1. Preheat oven to 180˚C
  2. Beat eggs and sugar until sugar dissolves. Add jam and beat again.
  3. Sift flour, bicarb, salt into mixing bowl.
  4. Melt butter on low heat, then add vinegar and stir, then add milk.
  5. Add egg/sugar/jam mixture to flour and mix well.
  6. Add butter/vinegar/milk and mix well.
  7. Pour mixture into baking dish and bake for 45 min.
  8. Meanwhile, mix sauce ingredients except brandy and simmer on low heat.
  9. Remove pudding from oven, mix brandy into sauce, pour over pudding.
  10. Poke holes in pudding with knife point to allow sauce to soak in.
